Slow Down

Done! 2021 is in the cellar.

What a wine year! The grand finale is a glorious golden fall that stretches all the way into November. Pushing the limits and waiting the extra days to bring the last of the fruit in was so worth it. Patience was rewarded with perfectly ripe and aromatic Grüner Veltliner and Riesling grapes and fragrant and wonderfully balanced musts . Fermentation is slow but steady this year. 2021 is not in a rush at all it seems. As if the wine year is telling us: „I own this guys, I set the pace all the way to the finishing line.“

Fine with us! We use this small break to stretch the sore muscles and slow down the pace. There’s still plenty to do in the cellar but with the last press of the vintage, a massive weight was taken off our shoulders.

Now we keep a close eye on the young wines, taste, give time, taste again, intervene as little as possible and let this remarkable vintage do the job.
